When it comes to white tea, many people immediately think of Fujian, but high-quality white tea is also produced in Yunnan, Hubei, Henan, Anhui, Zhejiang, and even Shaanxi.  

People ask: what does white tea really taste like?  What makes white tea taste differnt? And more importantly, how can we find the best white tea?

Of course not. Even leaves picked from the same tea tree can taste different depending on the season, the year, and how they are processed by hand.

That said, most white teas share some common characteristics: they are light, smooth, and naturally sweet, with very little bitterness or astringency. The tea liquor is pale yellow and clear, and the aroma often carries a gentle floral fragrance.

For me, the best white tea has more layers and a stronger fragrance than other white teas. Some white teas taste like chicken soup, while others taste like sugar water. But the best white tea has a true tea flavor — rich, full, and filled with flowery layers.

Yunnan white tea is mainly divided into two types based on plucking standards:

  • Ancient Tree White Tea: Made from one bud with three or four leaves, harvested from ancient tea trees. It offers a more layered, full-bodied flavor and can withstand multiple infusions.

During processing, white tea leaves are naturally withered and not rolled. Because of this, loose white tea can be fragile and easy to break. To improve preservation, many producers press white tea into cakes, coins, or dragon balls.
